JJ owner and chef, originally from Korea, trained in Japan and worked on both U.S. coasts before landing in Colorado Springs 3 years ago. (He previously worked at Fujiyama.) He was pleased to share that Yoo Mae means "dream," and asserted that sushi is not fast food; it is to be savored. JJ aims to name a roll after every state hence the large map of America.
